Sudachi is a citrus fruit native to Tokushima Prefecture in the north-east of the Japanese island of Shikoku (south of Osaka), where it has been grown since the 8th century.
The fruit used in Les vergers Boiron purée is grown in this region on small plantations, at between 300m and 400m in altitude.
Local cooperatives pick the fruit from the farmers’ trees before turning it into juice.
The harvest is done by hand when the sudachi is still green, from September to the end of October, to conserve its acidity.
Sudachi production is almost confidential (3,000 tonnes of picked each year) and the yield is very low: only 1kg of juice for 4kg of fruit!
